Today I made Pimento Cheese, Tuna Salad and Dressed-up Eggs (as I have always called them 🙂 ) to have for Zach’s lunches. If I don’t pack him one he always and I mean ALWAYS goes to Subway. While it is a healthier option than other fast food it is at least $5 a day. This year I am going to try to send his lunch at least 4 days a week- which would save us between $20 & $30 a week. Small changes can make a big difference!
To make the eggs I just boil the eggs. Open and scoop out the yellow. Mix with a little mayo, mustard, and relish. Scoop back in eggs and top with Paprika and Olives.
