This has been a great weekend! Friday night Zach and I went out with the young married couples group from our church. We went to eat at Demo’s in Hendersonville and it was so good! It was really fun and great to meet a lot of new people.
Last night we had 3 other couples over for dinner. I couldn’t decide what to make so I got out a cook book that mom gave me for Christmas last year that I have never used. It is called Notably Nashville by the Junior League. My sister-in-law loves the chicken enchilada recipe so I went with it and I think it was a hit!
For an appetizer I made Phyllo Sausage Cups. The recipe makes 30 and between the 8 of us they were all gone. I had picked up the Phyllo cups the other day because they were on sale and I knew they would be good around Valentine’s. This recipe is super easy and my friend Lauren makes it as a dip and serves it with Tostitos Roasted Garlic and Black Bean Artisan chips. (A Thank You to Lauren~ she always swoops in here before a party and helps me get it together! She is such a true friend and proves that time and again~ Love you, Lauren!)
This recipe on calls for 4 ingredients: Phyllo Cups, 1 bunch of green onions,2 boxes cream cheese and spicy sausage (I would recommend Tennessee Pride 😉 )
Start by cooking the sausage and draining it really well. Add in 2 boxes of cream cheese (room temp) and stir together. Add in chopped onions and then spoon into Phyllo cups. Bake at 350 degrees for 10-15 minutes until heated.
For desert I made Valentine Parfaits. I started with a Driver’s coconut cake and then layered chocolate pudding and cool whip and then topped with a strawberry. If you have never had a Driver’s Coconut Cake, I would recommend. My grandmother always loved them and it was a holiday staple served with Egg Nog. (with a little flavoring)
The parfaits look nice and can be customized for holidays. I made some chocolate peppermint ones a while back and they were awesome.
You could even top with a conversation heart for Valentine’s.
And lastly, here is my Valentine table decor. It was simple and just kind of thrown together but it worked! I will do a separate post with the Chicken Enchilada recipe 🙂 Enjoy this day!
