Dinner & a Movie: Seven Days in Utopia

If you are looking for a great movie to watch this weekend, I would highly recommend Seven Days in Utopia. We were searching through the Comcast list of OnDemand movies and fell upon it. We loved it! Based on David L. Cook’s best-selling book Golf’s Sacred Journey: Seven Days at the Links of Utopia, SEVEN DAYS IN UTOPIA also stars Melissa Leo, Deborah Ann Woll, Brian Geraghty, Jerry Ferrera, Joseph Lyle Taylor, KJ Choi and Kathy Baker. The film is directed by Matthew Dean Russell from a script by Cook, Rob Levine, Russell and Sandra Thrift. The film was produced by Mark G. Mathis (Brick, Precious) and Jason M. Berman (The Dry Land).

One of our go to meals are Flatbread Pizzas. They are so quick & easy, somewhat healthy(depending on your toppings) and delicious!

To make them you first you want to place the flatbread directly on the oven rack at about 425 degrees for about 5 minutes to get the crust a little crispier. Take out of oven and top with marinara sauce, veggies, meat and cheese. I love using real bacon bits as a topping. They are so much easier than cooking bacon and they have a great flavor. Aldi’s carries them and they are $1.39 a bag. We put them on pizza, salads, soups, breakfast burritos, and pretty much any recipe that calls for bacon. Once you get your flatbread decorated…

top with cheese (I use Mozzarella and Parmesan) and place back in the oven for about 6 minutes or until cheese is nice and melted.

 

I then usually top with crushed red pepper, black pepper and some Italian seasoning.
