This winter I have been using my Crock Pot at least a couple of times a week. A new crock pot is definitely in my future! I picked this one up at a yard sale a couple of years ago. It was brand new and was only .50 cents and has worked great. The one thing I don’t like is that you can’t put the container part in the dishwasher. Anyways…
Here are a few recipes I have made this week.
This is my favorite BBQ recipe. My sister-in-law has some great slow cooker recipes and this is one she shared with me. It is so easy and delicious!
1 Pork Butt
1 red onion sliced
1/2 cup pickled jalapenos
1/2 cup Apricot Preserves
Put all ingredients in Crock Pot and cook on low all day or on high for about 4 hours. When ready, it is so tender that it will just fall apart.
If you haven’t noticed, I am not very good at exact measurements on recipes. If any of them are not clear, just ask 🙂
1 bag of Rainbow or Broccoli Slaw
1/2 to 1/4 of Red Onion (finely chopped)
a few pinches of sugar
In a large bowl mix slaw, onion and mayo until you get the consistency you want. (I don’t like much mayo so just enough to cover the slaw) . Add in a splash of white vinegar and a pinch of sugar.
We usually eat the BBQ and slaw on tortillas. Yum!
3 chicken brests
1/2 pack of dry ranch dressing
1/2 cup Zesty Italian dressing
1 red onion
Cook all day on low or for 4 hours on high. Serve on tortillas with feta cheese, red onions and romaine lettuce.
We had these tonight with the cranberry slaw and Zucchini as a side. Quick, easy and tasty.
Over dinner tonight, Zach and I were talking about this time last year! A couple of days after Valentine’s we got Lucy and her 6 puppies. It was one of the most fun experiences of my life. We really did become dog people over night.
