Once Every Four Years

Here is a new recipe I made this week.  I had 1 Rotisserie chicken and used half to make this and the other half for a broccoli rice casserole.

Fiesta Chicken Casserole

I found the recipe on Pinterest but then tweeked it based on what I had in the fridge. My mom makes one similar to this with Doritos and it has always been a family favorite.

  • chopped chicken
  • instant rice ( i used a multi-grain rice)
  • salsa
  • 1 can cream of chicken soup
  • taco seasoning ( i mixed it with about 2 tbs. of water)
  • Cheddar cheese ( I also had a little queso cheese that I poured on top)
  • tortilla chips (a perfect thing to use all the crumbs in the bottom of the bag for)

Mix chicken, rice, salsa, soup and taco seasoning together. Put in 9×9 casserole dish and then top with cheese and chips. Bake for 30-40 minutes at 350 degrees.
