An Energy Booster

On Saturday, I spent the afternoon with my friends Rozi and Mary. They took me around Hickory, NC to some cute shops. All week I have been feeling like I have no energy, which is usually not like me! Mary was telling me about these “No Bake Energy Bites” she had made from Pinterest. I looked them up and gave them a try.

Ingredients
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix together…
and chill in the fridge.
The recipe calls to roll into balls for bite size portions but I just left in the bowl and put a note on it. I probably wouldn’t recommend this way if a bunch of people are going to be eating it but when it is just a couple, it works.
Not sure if it was these or all of the coffee and tea I have been drinking these past couple of days but I do have more energy!
Also, I want to share with you about this awesome store Rozi and Mary took me to on Saturday in Hickory, NC. It was called Resource Warehouse & Gallery. I think if I could open my own store it would be like this! They collect residential and industrial discards for creative use. The warehouse has supplies that can be purchased and then the gallery/store is where the artist can resale their creations. They also have a room with all kinds of supplies where they have classes and parties. A portion of all sales go to the Safe Harbor Rescue Missions.

 I bought an antique wood bed frame that I am pretty excited about. Pics of it to come later…

    1. Soon to be famous, I wish! I loved the dress with the rain boots and think it will be great for this summer 🙂 Loved the Evelyn story about her phone call this morning. I will have to tell Bob. He will get a kick out of that!
